Need Ideas

So I am unsure who is a fan of eating Fish, Salmon in particular.

But I am thinking of a "Salmon Skewer" made with Salmon (obviously), red onion, Pineapple, and teriyaki sauce. This would be grilled of course.

The problem I am having is figuring out what vegetable would be good on a skewer that includes teriyaki sauce.

My original though was Yellow Bell pepper. It's mild enough but would still add flavor. My only problem with this is the visual presentation.

The Pineapple is already yellow, and adding a yellow pepper just seems visually lazy.

What do any of you folks think? (No aparagus, its too easy to pair with baked Salmon, and wont go well with teriyaki...)

1. Green Bell pepper: An easy safe bet. That was my next closest alternative to the Yellow
2. Mushroom: Good for Steak and Pork, not as great to Pair with Salmon....good for a filler though.
3. zuchinni: I think Zukes are great... while still on display in the store. BLECH..... but maybe for other folks. Would have to test.
4. broccoli: I thought of this too. Probably just the Florettes? Not sure how they'd hold up on the grill.
5. fennel: Damn intriguing! Never cooked with it as a vegetable. Only the seeds themselves in Cookies. May have to try this.

Although if you have a rotisserie for your bbq. Do the pineapple on it in a brown sugar coating.

Tinfoil with the vents on the ends so that skewers on two sides can be used to flip it, otherwise the potatoes can end up burning on the cocking side. :P

I don't know if you are going to be making the sauces yourself or purchasing, but if you are making yourself you really ought to use this to mix them...
